Opened in May 2023 by industry veteran Stevie Sacco, The Bevy Co. is a female-owned and -operated venue that brings craft cocktail culture to the quiet town of Southbury. Its light and airy decor is the perfect place to relax with a cocktail, craft beer or wine and some appetizers. The Bevy Co. offers guests a full menu of unique cocktails to choose from along with craft beer and wine. To eat, guests will find a variety of appetizers, sandwiches, boards and ramen. According to Sacco, The Bevy Co.’s Shroom City cocktail was conceived by Catering Manager Mallory Monagan and Head Bartender Sara Scholl. “We wanted to try to find different avenues to the classic espresso martini,” Sacco said. “This cocktail includes a house-infused vanilla bean blanco tequila, local honey, Wild Moon Chai Spice Liqueur, and lion’s mane and chaga mushroom coffee.”

Ingredients:
» 2 oz vanilla-infused blanco tequila
» .5 oz Wild Moon Chai Spice Liqueur
» .5 oz honey syrup
» 1 scoop Four Sigmatic Instant Coffee Mix with Lion’s Mane & Chaga Mushrooms
» 2 dashes chocolate bitters
» Garnish: skeleton leaf affixed with a tiny clothespin

Method: Infuse a bottle of blanco tequila with a vanilla bean. Add all ingredients to a built-in shaker. Shake and serve up the mixture in a coupe glass.

 

“Shroom City was procured for our favorite kind of bar guest, the adventurer,” Sacco said. “We usually get the classic ‘Mushrooms?! In a cocktail?!’ reaction, but for our brave cocktail enthusiasts, they end up having a new favorite and a long conversation about how we got these ingredients into the glass. It is earthy, has a velvet mouthfeel and a subtle, sweet, beautiful aftertaste. This cocktail was an absolute no-brainer for me once I tried it the first time. It’s like nothing I’ve ever tasted and that’s not an easy feat in the current climate of craft cocktails.”
